Pav Bhaji

Pav Bhaji

Ingredients:

  • 4 medium-sized potatoes (boiled and mashed)
  • 1 cup cauliflower (boiled and mashed)
  • 1 cup green peas (boiled)
  • 2 cups finely chopped mixed vegetables (capsicum, carrots, beans)
  • 3 large tomatoes (pureed)
  • 1 large onion (finely chopped)
  • 1/4 cup butter
  • 2 tablespoons oil
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons pav bhaji masala
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander leaves (for garnish)
  • Pav (soft buns) for serving

Instructions:

  1. Heat oil and butter in a pan. Add chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for a minute.
  3. Add pureed tomatoes, pav bhaji masala, red chili powder, turmeric powder, and salt. Cook until the oil separates.
  4. Add mashed potatoes, cauliflower, green peas, and mixed vegetables. Mix well.
  5. Add water as needed to achieve the desired consistency. Simmer for 15-20 minutes, mashing the vegetables with a masher.
  6. Toast pav with butter on a griddle until golden brown.
  7. Garnish the bhaji with chopped coriander leaves.
  8. Serve the hot Pav Bhaji with buttered pav and lemon wedges.
