Pav Bhaji
Ingredients:
- 4 medium-sized potatoes (boiled and mashed)
- 1 cup cauliflower (boiled and mashed)
- 1 cup green peas (boiled)
- 2 cups finely chopped mixed vegetables (capsicum, carrots, beans)
- 3 large tomatoes (pureed)
- 1 large onion (finely chopped)
- 1/4 cup butter
- 2 tablespoons oil
- 1 tablespoon ginger-garlic paste
- 2 tablespoons pav bhaji masala
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- Fresh coriander leaves (for garnish)
- Pav (soft buns) for serving
Instructions:
- Heat oil and butter in a pan. Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute.
- Add pureed tomatoes, pav bhaji masala, red chili powder, turmeric powder, and salt. Cook until the oil separates.
- Add mashed potatoes, cauliflower, green peas, and mixed vegetables. Mix well.
- Add water as needed to achieve the desired consistency. Simmer for 15-20 minutes, mashing the vegetables with a masher.
- Toast pav with butter on a griddle until golden brown.
- Garnish the bhaji with chopped coriander leaves.
- Serve the hot Pav Bhaji with buttered pav and lemon wedges.
