Mumbai Style VadaPav
Ingredients:
- Pav (soft rolls)
- Potato filling:
- Boiled and mashed potatoes
- Mustard seeds, cumin seeds
- Curry leaves
- Green chilies, ginger-garlic paste
- Turmeric powder, red chili powder
- Salt, coriander leaves
- Gram flour batter:
- Gram flour (besan)
- Water
- Turmeric powder, red chili powder, baking soda
- Salt
- Green chutney:
- Coriander leaves, mint leaves
- Green chilies, garlic
- Lemon juice, salt, sugar
- Tamarind chutney:
- Tamarind pulp, dates
- Jaggery, cumin powder, red chili powder, salt
Instructions:
- Prepare the potato filling by sautéing mustard seeds, cumin seeds, curry leaves, green chilies, and ginger-garlic paste. Add mashed potatoes, spices, and coriander leaves. Mix well.
- Make the gram flour batter by mixing besan with water, turmeric powder, red chili powder, baking soda, and salt. Ensure a smooth consistency.
- Dip potato mixture balls in the gram flour batter and deep fry until golden brown.
- For green chutney, blend coriander leaves, mint leaves, green chilies, garlic, lemon juice, salt, and sugar until smooth.
- For tamarind chutney, cook tamarind pulp, dates, jaggery, cumin powder, red chili powder, and salt until it thickens.
- Slice pav and apply tamarind chutney on one side and green chutney on the other.
- Place a fried potato ball in the pav and press gently. Serve hot.
