Gujarati Khaman Dhokla
Ingredients:
- 1 cup gram flour (besan)
- 1/4 cup semolina (sooji)
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- 1 tablespoon ginger-green chili paste
- 1 cup yogurt
- Salt to taste
- 1 teaspoon sugar
- 1 teaspoon lemon juice
- 1 teaspoon Eno fruit salt
- Fresh coriander leaves for garnish
- Grated coconut for garnish (optional)
Instructions:
- In a bowl, mix gram flour, semolina, oil, ginger-green chili paste, yogurt, salt, sugar, and lemon juice to form a smooth batter. Let it rest for 15-20 minutes.
- In a steamer, bring water to a boil.
- Grease a steaming tray or thali with oil.
- Just before steaming, add Eno fruit salt to the batter and mix well. The batter will become frothy.
- Pour the batter into the greased tray and place it in the steamer.
- Steam for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- In a small pan, heat oil and add mustard seeds, cumin seeds, and asafoetida. Once they splutter, pour the tempering over the steamed dhokla.
- Garnish with chopped coriander leaves and grated coconut if desired.
- Cut into squares and serve. Enjoy your homemade Khaman Dhokla!
