Homemade Pistachio Energy Bars Recipe

Energy Bar 

Ingredients:

  • 1 cup pitted dates
  • 1 cup raw unsalted pistachios
  • 1/2 cup old-fashioned rolled oats
  • 2 tablespoons honey
  • 1/4 teaspoon sea salt

Instructions:

  1. Preheat your oven to 350°F (180°C).
  2. Spread the pistachios on a baking sheet and toast them in the oven for 8-10 minutes, or until lightly browned and fragrant.
  3. In a food processor, blend the dates until they form a smooth paste.
  4. Add the toasted pistachios, oats, honey, and sea salt to the food processor and pulse until everything is well combined and the mixture is sticky.
  5. Line an 8-inch (20 cm) square baking dish with parchment paper.
  6. Transfer the pistachio mixture to the baking dish and press it firmly and evenly into the bottom of the dish.
  7. Chill in the refrigerator for at least 30 minutes, or until firm.
  8. Once the energy bars have firmed up, remove them from the dish using the parchment paper as handles.
  9. Cut the bars into desired sizes and serve.
