- 1 cup pitted dates
- 1 cup raw unsalted pistachios
- 1/2 cup old-fashioned rolled oats
- 2 tablespoons honey
- 1/4 teaspoon sea salt
- Preheat your oven to 350°F (180°C).
- Spread the pistachios on a baking sheet and toast them in the oven for 8-10 minutes, or until lightly browned and fragrant.
- In a food processor, blend the dates until they form a smooth paste.
- Add the toasted pistachios, oats, honey, and sea salt to the food processor and pulse until everything is well combined and the mixture is sticky.
- Line an 8-inch (20 cm) square baking dish with parchment paper.
- Transfer the pistachio mixture to the baking dish and press it firmly and evenly into the bottom of the dish.
- Chill in the refrigerator for at least 30 minutes, or until firm.
- Once the energy bars have firmed up, remove them from the dish using the parchment paper as handles.
- Cut the bars into desired sizes and serve.
