Ingredients
4 large eggs, at room temperature 1 cup (200g) granulated sugar 1 cup (125g) all-purpose flour 1 tsp baking powder 1/4 cup (60ml) warm milk or water 1 tsp vanilla extract A pinch of salt
Instructions
1. Preheat your oven to 350F (175C). Grease and line two 8-inch round cake pans.
2. In a large bowl, whisk the eggs and sugar together using an electric mixer until thick, pale, and tripled in volume (about 5-8 minutes).
3. Sift the flour, baking powder, and salt together.
4. Gently fold the sifted dry ingredients into the whipped eggs in three batches, being careful not to deflate the mixture.
5. Mix the warm milk and vanilla extract together, then gently fold into the batter.
6. Divide the batter evenly between the prepared pans.
7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
