Ingredients
• 2 tbsp lemon juice
• 1 tbsp oil
• 1 tsp mustard seeds
• 1 tsp chana dal
• 1 tsp urad dal
• A pinch of asafoetida
• 1-2 green chilies, slit
• 1 tsp ginger, finely chopped
• 1/4 tsp turmeric powder
• A handful of peanuts
• A sprig of curry leaves
• Salt to taste
• Fresh coriander for garnish
Instructions
1. Heat oil in a pan. Add mustard seeds, chana dal, urad dal, and peanuts. Sauté until golden brown.
2. Add green chilies, ginger, curry leaves, and asafoetida. Sauté for a minute.
3. Turn off the heat. Add turmeric powder and lemon juice. Mix well.
4. Add the cooked rice and salt. Mix gently until the rice is evenly coated and turns yellow.
5. Garnish with fresh coriander and serve.
