Introduction
Sev Tameta Nu Shaak is a popular and delicious Kathiyawadi (Gujarati) curry made with tomatoes and sev (crispy chickpea flour noodles). It’s famous for its unique combination of sweet, tangy, and spicy flavors, usually served with hot rotlas or parathas.
Ingredients
• 3-4 large Tomatoes, finely chopped
• 1 cup Sev (thick or medium variety)
• 2 tbsp Oil
• 1 tsp Mustard seeds
• 1 tsp Cumin seeds
• A pinch of Asafoetida (Hing)
• 1-2 Green chilies, finely chopped
• 1 tsp Ginger-garlic paste
• 1/2 tsp Turmeric powder
• 1 tsp Red chili powder
• 1 tsp Coriander-cumin powder
• 1-2 tbsp Jaggery or Sugar (optional)
• Salt to taste
• Fresh coriander leaves for garnishing
• Water as needed
Instructions
1. Tempering: Heat oil in a pan. Add mustard seeds and cumin seeds. Let them splutter.
2. Aromatics: Add asafoetida, green chilies, and ginger-garlic paste. Sauté for a few seconds.
3. Cook Tomatoes: Add the chopped tomatoes and salt. Mix well, cover, and cook on medium flame until tomatoes become soft and mushy.
4. Spices: Add turmeric powder, red chili powder, coriander-cumin powder, and jaggery/sugar. Stir well and cook for another 2 minutes until oil starts separating.
5. Gravy: Add about 1 to 1.5 cups of water and bring it to a boil.
6. Add Sev: Just before serving, lower the heat, add the sev, and simmer for 1-2 minutes.
7. Garnish: Turn off the stove, garnish with fresh coriander leaves.
