Vegetable Pulao in Microwave
Ingredients:
- 1 cup basmati rice (washed & soaked for 20 minutes)
- 2 cups water
- 1 tbsp oil or ghee
- ½ tsp cumin seeds
- 1 small onion (sliced)
- ½ cup mixed vegetables (carrot, peas, beans, capsicum)
- 1 small tomato (chopped)
- 1 green chili (slit)
- ½ tsp ginger-garlic paste
- ½ tsp garam masala
- ¼ tsp turmeric powder
- ½ tsp red chili powder
- ½ tsp salt (or as per taste)
- 1 tbsp chopped coriander leaves
- 1 bay leaf (optional, for extra aroma)
- 2-3 cloves (optional)
Steps to Make Microwave Vegetable Pulao:
- Prepare the Microwave-Safe Bowl
- Take a large microwave-safe glass bowl (to prevent overflow).
- Add oil or ghee to the bowl.
- Tempering
- Add cumin seeds, bay leaf, and cloves (if using).
- Microwave on high for 30 seconds until they splutter.
- Sauté Onion & Spices
- Add sliced onions, green chili, and ginger-garlic paste.
- Microwave on high for 2 minutes, stirring once in between.
- Add Vegetables & Tomatoes
- Mix in the chopped vegetables and tomatoes.
- Microwave on high for 3 minutes, stirring once.
- Add Spices & Rice
- Add garam masala, turmeric, red chili powder, and salt.
- Drain the soaked rice and mix it in with the vegetables.
- Add Water & Cook
- Pour 2 cups of water and stir well.
- Cover the bowl with a microwave-safe lid or plate.
- Microwave on high for 10–12 minutes (check after 10 minutes).
- Rest & Garnish
- Let it sit for 5 minutes before opening.
- Fluff the pulao with a fork to separate the grains.
- Garnish with chopped coriander leaves.
Serving Suggestions:
- Serve hot with raita, yogurt, or pickle.
- Can be paired with papad or a side of curry.
