Vegetable Pulao in Microwave

Ingredients:

  • 1 cup basmati rice (washed & soaked for 20 minutes)
  • 2 cups water
  • 1 tbsp oil or ghee
  • ½ tsp cumin seeds
  • 1 small onion (sliced)
  • ½ cup mixed vegetables (carrot, peas, beans, capsicum)
  • 1 small tomato (chopped)
  • 1 green chili (slit)
  • ½ tsp ginger-garlic paste
  • ½ tsp garam masala
  • ¼ tsp turmeric powder
  • ½ tsp red chili powder
  • ½ tsp salt (or as per taste)
  • 1 tbsp chopped coriander leaves
  • 1 bay leaf (optional, for extra aroma)
  • 2-3 cloves (optional)

Steps to Make Microwave Vegetable Pulao:

  1. Prepare the Microwave-Safe Bowl
    • Take a large microwave-safe glass bowl (to prevent overflow).
    • Add oil or ghee to the bowl.
  2. Tempering
    • Add cumin seeds, bay leaf, and cloves (if using).
    • Microwave on high for 30 seconds until they splutter.
  3. Sauté Onion & Spices
    • Add sliced onions, green chili, and ginger-garlic paste.
    • Microwave on high for 2 minutes, stirring once in between.
  4. Add Vegetables & Tomatoes
    • Mix in the chopped vegetables and tomatoes.
    • Microwave on high for 3 minutes, stirring once.
  5. Add Spices & Rice
    • Add garam masala, turmeric, red chili powder, and salt.
    • Drain the soaked rice and mix it in with the vegetables.
  6. Add Water & Cook
    • Pour 2 cups of water and stir well.
    • Cover the bowl with a microwave-safe lid or plate.
    • Microwave on high for 10–12 minutes (check after 10 minutes).
  7. Rest & Garnish
    • Let it sit for 5 minutes before opening.
    • Fluff the pulao with a fork to separate the grains.
    • Garnish with chopped coriander leaves.

Serving Suggestions:

  • Serve hot with raitayogurt, or pickle.
  • Can be paired with papad or a side of curry.
