Veg Puff Pastry Recipe

Ingredients:

For the pastry:

1 sheet puff pastry (store-bought, thawed)

1 tbsp milk or oil (for brushing)

For the veg filling:

1 medium potato – boiled, peeled & mashed

1 small onion – finely chopped

1/4 cup green peas (fresh or frozen)

1 small carrot – finely chopped or grated

1 green chili – finely chopped (optional)

1/2 tsp ginger-garlic paste (optional)

1/2 tsp garam masala

1/4 tsp turmeric

1/2 tsp cumin seeds

Salt to taste

1 tbsp oil

Fresh coriander – chopped (optional)

Instructions:

1. Make the filling:

  1. Heat oil in a pan. Add cumin seeds and let them splutter.
  2. Add onions and green chili. Sauté until soft.
  3. Add ginger-garlic paste (if using) and sauté briefly.
  4. Add carrots and peas. Cook for 2–3 mins until soft.
  5. Add mashed potato, turmeric, garam masala, and salt. Mix well.
  6. Cook for another 2–3 mins till everything is combined and dry.
  7. Turn off heat. Add chopped coriander if desired. Let it cool completely.

2. Assemble the puffs:

  1. Preheat oven to 400°F (200°C).
  2. Roll out the puff pastry slightly and cut into equal-sized rectangles or squares.
  3. Place 1–2 tbsp of the filling on one half, then fold and seal the edges using a fork.
  4. Brush the tops with milk or oil.

3. Bake:

  • Place on a baking tray lined with parchment paper.
  • Bake for 20–25 minutes or until golden brown and puffed up.

Serve warm with ketchup or green chutney.
