Veg Puff Pastry Recipe
Ingredients:
For the pastry:
1 sheet puff pastry (store-bought, thawed)
1 tbsp milk or oil (for brushing)
For the veg filling:
1 medium potato – boiled, peeled & mashed
1 small onion – finely chopped
1/4 cup green peas (fresh or frozen)
1 small carrot – finely chopped or grated
1 green chili – finely chopped (optional)
1/2 tsp ginger-garlic paste (optional)
1/2 tsp garam masala
1/4 tsp turmeric
1/2 tsp cumin seeds
Salt to taste
1 tbsp oil
Fresh coriander – chopped (optional)
Instructions:
1. Make the filling:
- Heat oil in a pan. Add cumin seeds and let them splutter.
- Add onions and green chili. Sauté until soft.
- Add ginger-garlic paste (if using) and sauté briefly.
- Add carrots and peas. Cook for 2–3 mins until soft.
- Add mashed potato, turmeric, garam masala, and salt. Mix well.
- Cook for another 2–3 mins till everything is combined and dry.
- Turn off heat. Add chopped coriander if desired. Let it cool completely.
2. Assemble the puffs:
- Preheat oven to 400°F (200°C).
- Roll out the puff pastry slightly and cut into equal-sized rectangles or squares.
- Place 1–2 tbsp of the filling on one half, then fold and seal the edges using a fork.
- Brush the tops with milk or oil.

3. Bake:
- Place on a baking tray lined with parchment paper.
- Bake for 20–25 minutes or until golden brown and puffed up.

Serve warm with ketchup or green chutney.
