Vanilla Muffins


  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1 tbsp apple cider vinegar
  • 1 tbsp vanilla extract


  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  3. In a separate mixing bowl, whisk together the milk, vegetable oil, granulated sugar, apple cider vinegar, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix, or your muffins will be tough.
  5. Spoon the batter into the prepared muffin tin, filling each muffin cup about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes.
  8. After 5 minutes, remove the muffins from the tin and transfer them to a wire rack to cool completely.
