Vanilla Muffins
Ingredients:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup milk
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1 tbsp apple cider vinegar
- 1 tbsp vanilla extract
Instructions:
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
- In a separate mixing bowl, whisk together the milk, vegetable oil, granulated sugar, apple cider vinegar, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix, or your muffins will be tough.
- Spoon the batter into the prepared muffin tin, filling each muffin cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes.
- After 5 minutes, remove the muffins from the tin and transfer them to a wire rack to cool completely.
