Red Velvet Cake
Ingredients:
- 1 and 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- 1 tsp salt
- 1 tbsp cocoa powder
- 1/2 cup vegetable oil
- 1 cup buttermilk
- 1 tsp vanilla extract
- 1 tbsp vinegar
- 1 tbsp red food coloring
For the Cream Cheese Frosting:
- 8 oz cream cheese, at room temperature
- 1/4 cup unsalted butter, at room temperature
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 350°F (180°C). Grease a 9-inch cake pan with cooking spray or butter and flour it.
- In a large mixing bowl, sift together flour, sugar, baking soda, salt, and cocoa powder. Mix well and set aside.
- In another mixing bowl, whisk together oil, buttermilk, vanilla extract, vinegar, and red food coloring. Mix well until fully combined.
- Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix the batter.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Remove the cake from the oven and let it cool completely before frosting.
For the Cream Cheese Frosting:
- In a mixing bowl, cream together cream cheese and butter until smooth.
- Add powdered sugar and vanilla extract and mix well until fully combined.
- Once the cake has cooled completely, spread the cream cheese frosting on top of the cake. You can also decorate the cake with additional frosting, if desired.
- Serve and enjoy your delicious eggless red velvet cake!
